Food fraud, an issue causing a $65 billion USD damage/year to the industry, happens when there are discrepancies between the labeling information and the real food in the package, and the discrepancies are caused by intentional practices for extra economic benefits.

Although, not primarily intended to cause damage to health, food fraud issues can lead to more severe food safety consequences if toxic materials, allergenic ingredients, or deteriorated products were used as adulterants.

Food fraud issues also result in consumers’ long-term mistrust of the food industry and government. Effective prevention strategies are needed for protection. Since the margin benefit of food industry is generally low, strategies to combat food fraud need to be cost- and time-efficient. In this presentation, Food Scientist Yaxi Hu will talk about how we can apply the advanced analytical chemistry tools to serve as the last barrier for food fraud prevention and thus to best protect consumers and genuine food industry.

About the Presenter

Yaxi Hu | Assistant Professor, Food Science Program, Department of Chemistry @Faculty of Science, Carleton University recently joined Carleton University as an Assistant Professor in Jul 2022 after aquiring her M.Sc. and Ph.D degrees in food science from the University of British Columbia, and my B.Sc. in biological science from China Agricultural University and postdoctoral trainings in the Chemistry department of UBC and the Food Research Division of Health Canada.
Yaxi’s research has been mainly focused on developing analytical tools for food authenticity, quality and safety issues. The analytical methods developed in her study range from the cheap and user-friendly sensors for rapid screening to highly accurate and sensitive methods for confirmative analysis using sophisticated instrument.
